Palm Fruit Bunch Sterilization Purpose
(1) Destroy the activity of fat-decomposing enzymes, while preventing hydrolysis and oil oxidation;
(2) For large oil palm processing equipment, when fruit bunches are sterilized, high-pressure steam softens the fruit bunches, which are shaken and tumbling in the thresher , The oil palm fruit is easy to fall off the fruit bunch;
(3) Microscopically, part of the oil-containing cells are dispersed in the protein. The hot steam makes the protein coagulate, and the protein coagulation makes the oil-containing cells gather together under the action of pressure. The oil is easier to flow;
(4) The anti-fermentation softens the pulp structure of the oil palm fruit, making the pulp tissue easier to separate from the fiber and the pit during the mashing process. The high-temperature steam is sufficient to break the oily cells in the pulp, thereby causing the oil Easy to flow out;
(5) The high-pressure steam expands the moisture inside the nucleolus, and when the pressure is quickly removed, the nucleolus rapidly shrinks, which is beneficial to the separation of the nucleolus and the core-shell.
